Braised Pork Tenderloin in Chimay Triple Sauce

Introduction

This recipe takes the succulent pork tenderloin and combines it with the rich and fruity flavor of Chimay Tripel beer, from Belgium. Ingredients.

  • 500 grams of pork tenderloin
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 200 ml Chimay Tripel beer
  • 200 ml chicken stock
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation:

  1. Preheat the oven to 180°C.

  2. Heat the olive oil in an oven-proof skillet over medium-high heat. Sprinkle the pork tenderloin with salt and pepper and cook until golden brown on all sides. Remove the pork tenderloin from the pan and set aside.

  3. In the same pan, add the chopped onion and garlic. Fry them until they are soft and glazed.

  4. Add the Chimay Tripel beer to the pan and bring to a boil. Simmer the beer for a few minutes to allow the alcohol to evaporate.

  5. Add the chicken stock, Dijon mustard, honey and dried thyme to the pan. Stir everything well and bring to a boil.

  6. Place the pork tenderloin back in the pan, making sure it is completely covered with the sauce. Cover the pan and place it in the preheated oven.

  7. Let the pork tenderloin cook in the oven for about 20-25 minutes, or until the internal temperature reaches 63°C.

  8. Remove the pan from the oven and let the pork tenderloin rest for a few minutes before cutting. This allows the juices to redistribute and keeps the meat deliciously tender.

  9. Slice the pork tenderloin and serve it with the Chimay Tripel sauce on top. Garnish with fresh parsley for a fresh touch.
